Brown the ground beef with the onion, add salt, pepper and mix.
Soften the flour tortillas (or corn) in the microwave for about 1/2 minute. Dip the tortillas in the enchilada sauce, add cheese, a spoonful of the meat and a teaspoon (to taste) of the green chiles (as desired). Roll the tortilla and tuck the end and stack in a 9"X13" Baking pan or dish (sprayed with Pam and you can line with foil, if you like). When the pan is full of the filled tortillas, pour the remaining enchilada sauce, sprinkle with cheese and garnish with the olives.
Very Hearty eating! You can serve with sourcream or other garnish, if you'd like.
